Recipe: How To Make The Delicious Ghanaian Delicacy ‘Kaklo’

Kaklo KakroKaklo or Kakro (fried plantain cake) is a delicious traditional Ghanaian snack made from very ripe plantain.

Kaklo is somewhat similar to Mosa, a Nigerian snack except that it doesn’t contain yeast.

Here is how to make this simple yet delicious delicacy.

Ingredients

  • 3- 4 overripe plantains
  • 1 cup of  flour
  • 1 small onion
  • 1 teaspoon of ground/chili pepper
  • 1 tablespoon of ground ginger
  • Vegetable oil
  • Salt to taste

Preparation

1. Peel plantains and cut them into a bowl.

2. Blend the plantain into a smooth puree or use an earthenware bowl and mortar to mash the plantain.

3. Add the onion, ginger, salt, pepper and mix well with a spatula.

4. Add the flour and mix well.

5. In a deep skillet, heat a large volume of oil over medium heat.

6. Using a spoon, scoop some of the dough and dip it in hot oil.

7. Fry on both sides until golden brown.

8. Remove from oil and place on a tray with kitchen towel paper.

9. Serve hot or warm.

10. Kaklo can be eaten alone, with roasted groundnuts, cooked beans or sauce.
